Roasted Peach Chicken,Cali Quilt #2 and Millies new do~♥
This is my Peach chicken which I made for my minnie Vinnie who happens to have LOTS of food allergies~he has taught me how to cook dairy and egg free~This old bird (me) still has a lot of tricks up her sleeve!
Vinnie really liked this recipe and it actually suited the whole family~One of the tricks I am learning....no-one needs to know about egg replacements and Silk milk at the supper table~no discussion...when they ask "what is it?" I say,"Its delicious!"
Oh and cold cooked corn on the cob is great for teething munchkins!

Ingredients
- 1 whole chicken (2-3 pounds)
- 1/4 cup grapeseed oil I used olive oil..
- 1 tbsp sea salt (celtic)
- 6 peaches (quartered)
- 4 shallots (halved)
- 6 sprigs fresh thyme
Here is the magnificent Cali #2 quilt coming along slowly but surely~I am doing some tiny feathers so it's taking some time...
That chicken looks scrumptious!! I could just jump right through the monitor and grab a bite!!! LOL
